Gram Beil's Peanut Butter Eggs
1 1/2 sticks butter (6 oz) 1 8oz pkg cream cheese 1/2 cup half and half or evaporated milk 2 1/2 cups peanut butter (Gram swears by Skippy) 1 2lb bag of powdered sugar + 3 more cups of powdered sugar (have 3 lbs on
hand, just in case) Cream butter, cream cheese, milk, and peanut butter together until well mixed. Gradually add the powdered sugar until the dough is stiff enough to shape and does NOT stick to your hands. Shape into balls (for Christmas) or eggs (for Easter) and put on cookie sheets. Cover lightly with plastic wrap and place the cookie sheets in the freezer over night. The next day, melt semi-sweet bakers chocolate in small batches to coat the balls. You will need at least three boxes of bakers chocolate. |
